New Favorite Cookie Alert: Almond Raspberry Thumbprints!
These babies are delicious. The cookie tastes like Marzipan with the sweetness of Raspberry Jam on top. What I especially love about this recipe is that you can switch up any jam and have a new spin on a favorite cookie.
- 1 cup (230g) unsalted butter, softened to room temperature
- 2/3 cup (134g) granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups + 2 Tbsp (264g) all-purpose flour (measured correctly)
- 1/2 cup (160g) raspberry jam
- 1 cup (120g) powdered sugar
- 1 Tablespoon (15g) cream or milk
- 1 teaspoon vanilla or almond extract (optional)
Make the cookies: Using a hand mixer beat the butter on high speed until creamy. Switch mixer to medium speed and add the the sugar, vanilla, and almond extracts. Turn the mixer on low and add flour. Tightly cover with plastic wrap to chill until firm, at least 2 hours.
Preheat oven to 350F degrees. Line two baking sheets with parchment paper. Shape the cookie dough into balls. Make an indentation with your thumb into each ball. Fill each with jam.
Bake the shortbread thumbprint cookies for 14 minutes
Make the glaze: stir together glaze ingredients until smooth. Drizzle over cooled cookies.

Chocolate Brownie Truffles with Peppermint aka Reindeer Poop!
It’s that time of year where treats are all around. Whether it’s the office holiday party, sweet treats for your neighbors or sugar for your own sweet tooth, this dessert is EASY and sure to get you in the Christmas spirit!
Use your favorite Brownie recipe to start. Once the brownies are finished cooking let them cool and then crumble your brownies and form them into balls. Melt chocolate, coat your brownie balls with the melted chocolate, sprinkle with peppermint and cool in the fridge. Voila! You have yourself your very own Reindeer Poop - yum! :P
